OK, here’s your five minute, meatless Monday meal.
We don’t eat tofu very often, but we definitely enjoy it when we do.
It picks up any flavour that you cook with making it a simple alternative for just about any recipe.
Melt a little bit of coconut oil in a pan on medium heat.
- 2 finely chopped green onions
- 1 diced tomato
- a generous pinch of chopped parsley
- a dash of turmeric, salt and pepper
Let these sizzle for two minutes and then add in one 175g package of organic firm tofu, crumbled.
Heat through and place half of the mixture in the middle of one wrap (rice or sprouted wheat would be great) that has a thin layer of mashed avocado on it.
Cut in half, serve with a few extra avocado slices…
My beautiful little four year old just devoured it!
