SO, SO simple!
- 1/2c plus 2 tbsp of all purpose gf flour (we use Bob’s)
- 1/2tsp of baking powder
- 1tbsp of chia seeds
- 1 mashed banana
- 6tbsp of ‘So Delicious’ coconut milk
- the juice of one orange
- 1tsp of orange zest (optional)
- a pinch of nutmeg, clove or cinnamon – or all of them!
Coconut, banana and orange… such a great combo!!!
Melt some coconut oil in a pan on medium heat and pour your batter in … in whatever shape or size you like.
Maybe four or five minutes a side?
We only add a bit of maple syrup to the pancakes… the coconut is present and makes them taste so good!
Enough here for two small people and a bit leftover for mom!
